Does anyone know why an airline would not give a person a choice in when they depart from a country?

I’m in Denver, CO, and I’m constantly looking for rediculously cheap deals just to get out.
Some places in particular that interest me are, australia, japan, china (hong kong), south america, europe… hmm, I guess I’m covering a lot of ground here, no?
